Canton, Ohio (January 21, 2020) Gervasi Vineyard is Celebrating a Diamond Anniversary and has several special promotions and celebratory events scheduled for the month of March 2020.

Gervasi Vineyard’s history began a decade ago when owner Ted Swaldo, inspired by Grandma Gervasi’s (maiden name) and the family’s traditional Italian ways and cooking, saw great potential in an overgrown 55-acre piece of land with a two-hundred-year-old barn all located on the edge of Canton.

Ted had a dream of creating a place for people to come to enjoy time together with an alluring bottle of Italian wine and traditional Italian food all served surrounded by their own specially designed slice of Tuscany.

Ted’s son, Scott Swaldo, is the general manager and has been overseeing all operations and development.

“We started with the restoration of the barn in 2009, we knew it had to have an Italian feel in the design,” Scott said. “The rustic elegance of the barn is one of the first things visitors notice. After the barn, we built the pavilion designed with the same elegance, grace and style.”

The Bistro, which initially occupied the upper level of the barn, was opened March 16, 2010. A few months later, The Piazza (the outdoor dining venue located immediately behind the barn) was opened, and the surrounding vineyards were planted. The Tuscan-style Pavilion was also added to the estate the summer of 2010 to host large-scale outdoor weddings and events.

Gervasi Vineyard has continued to evolve and is now a destination winery resort offering a place for celebrations of love, marriage, birthdays, special personal events…and life.

The property has become home to a winery inside The Crush House (October 2013); distillery (January 2019); several distinct restaurants including The Bistro, The Piazza, The Crush House, and The Still House (December 2018); The Villas and Villa Grande with 24 luxury overnight suites (October 2013); The Casa, an upscale boutique hotel with 24 additional luxury overnight suites (May 2019); and The Marketplace, a boutique gift shop.

In celebration of the customer support over the past 10 years, Gervasi Vineyard is offering several special events in the month of March including:

Canton, Ohio (March 30, 2018): With the construction for the Gervasi distillery and boutique hotel underway, GV Destinations has released the name, renderings and logos for the two new buildings that will reside on the south end of the 55-acre estate.

The distillery is cleverly named “The Still House at Gervasi Vineyard”, the word “still” is derived from “distillery”. A still is an apparatus used to distill liquid mixtures by heating to selectively boil and then cooling to condense the vapor.

Following suit for the name of The Crush House (which houses the winery), The Still House will house the distillery, feature craft cocktails, a cigar lounge, and a coffee house. The large 10,000 sq. ft. structure will feature an extensive line of craft spirits including those locally made. The distillery will open with wine barrel aged bourbon, whiskey, vodka, gin, and select liquors and brandy. The offering of spirits is still under development and will evolve as Gervasi seeks to obtain a master distiller.

“The inspiration for the Italian structure of the distillery is to replicate the look of a church,” said Ted Swaldo, Owner/Proprietor of GV Destinations. “The church, which includes a bell tower, is the center of the town in small villages in Italy, so we felt it was a perfect fit on the Gervasi estate. It is important for us to continue to connect to the Tuscan-inspired feel, but we also wanted to introduce a new design with a fresh look. We found a photograph of a mission-style chapel in Tuscany that we loved and incorporated it in the design.”

The theme of a mission-style church continues inside as the large open structure boasts high ceilings, wooden beams and pendant lights. In the spacious structure, two cozy lounges are accessible for small groups to retreat. Oversized windows will showcase the distillery to allow guests an inside look at the still process. Outside, cigar aficionados can relax at the cigar lounge overlooking the GV estate.

The Still House will be known as a distillery, craft cocktail and cigar lounge by night, but during the day, the church-like structure will transform into a coffee house. The café will feature a new line of Gervasi’s premium blend of organic, fair trade, locally roasted coffee. A variety of specialty coffee beverages will also be available.

The boutique hotel named “The Casa at Gervasi Vineyard” (“casa” translates to the word “house” in Italian), will be built immediately behind The Still House. The single-story structure will host 24 large, luxurious suites. The 18,000 sq. ft. luxury hotel will complement the Tuscan paradise with the same mission décor including off-white stucco with a dark roof, wood accents and wrought iron. Wall niches and Italian tile inlays adorn both the interior and exterior of the guest rooms. Italian tile floors include wood accents; rustic beams and wood ceiling details crown the Tuscan-inspired look.

The Casa will feature a shared lobby and offer an exercise facility for Gervasi guests. The lavish guest suites will mirror the suites in The Villas with high end amenities and features: luxury king-sized beds, in room fireplaces, heated tile floors, heated towel bars and grand showers, as well as other deluxe amenities. In addition, each guest suite will have a covered veranda with direct view and access to a private courtyard and pond with beautiful gardens.

An offering of five different Italian-style gourmet continental breakfasts is included for overnight guests and will be delivered to guest rooms, as well as the availability of deluxe in-room services such as spa treatments, massages and yoga. Guests may order Gervasi wines, specialty foods, and flowers to be delivered to their room.

The project is scheduled for completion in late 2018 to early 2019. Renderings may be viewed at gervasivineyard.com.

Canton, Ohio (February 1, 2018): Gervasi Vineyard will be expanding Gervasi Village with the addition of a luxury boutique hotel and distillery on the 55-acre estate. The construction of this two-building expansion will begin this spring.

From the concept as a winery in 2010, the large 55-acre estate has grown considerably over the past eight years. The destination resort is built around a state-of-the-art winery currently offering 20+ varietals of wines made on site which includes three estate wines made from grapes grown at Gervasi Vineyard. In addition, Gervasi Village houses three distinct restaurants on the property: The Bistro, The Crush House Wine Bar & Eatery, and The Piazza (seasonal outdoor patio). Two large event spaces were built to host high-end weddings, social functions and corporate events: The Pavilion and The Villa Grande. Guests may stay overnight on the property with the option of two lodging facilities, The Villas and The Farmhouse.

“The addition of a boutique hotel and distillery further exemplifies Gervasi Vineyard as a destination resort,” said Ted Swaldo, Owner/Proprietor of GV Destinations. “To grow strategically, our objective is to listen to our guests and align our business accordingly.”

The hotel and distillery will be built together just across from The Crush House Wine Bar & Eatery on open land currently located on the large estate, specifically on the southwest quadrant. The two new venues will boast a Tuscan-mission style motif and wrap around a European landscaped courtyard to complement the Italian design of the Tuscan-inspired winery and estate.

“We are proud to have grown the Gervasi brand and continue to build Gervasi Village from our Italian heritage”, said Swaldo.

The single-story boutique hotel will host 24 large, luxurious individual suites featuring king-sized beds, fireplaces, heated floors, and other high-end amenities. A covered patio (veranda) will be adjacent to each room, allowing guests to enjoy the picturesque view of the courtyard and pond. The 18,000 sq. ft. structure will feature a shared lobby with an exercise facility for guests. Similar to The Villas, the hotel will offer a gourmet Italian-style continental breakfast delivered to each guest room, as well as deluxe in-room services such as spa treatments, massages and yoga. Guests may order Gervasi wines, specialty foods, and flowers to be delivered to their room.

Once completed, the destination resort will offer a total of 48 luxury suites between the new boutique hotel (name to be announced) and The Villas at Gervasi Vineyard. In addition, The Farmhouse (the original house to the property, circa 1820) also offers accommodations for up to eight guests in four bedrooms, complete with a modern kitchen, large dining room and quaint wrap-around porch facing the spring-fed lake.

“Gervasi Vineyard is a leading example of why one should always dream big,” said Donn Angus, Director of Planning for the City of Canton. “What the Swaldo family has developed in Canton is nothing short of amazing! With the announcement of the future upscale hotel and distillery, I cannot wait to see the completion of these two spectacular venues and the overall community impact. It will certainly prove to be another premiere asset for our fine city.”

Further cementing the position as a destination resort in Ohio, the Swaldo family is adding a 10,000 sq. ft. distillery featuring an extensive line of craft spirits. The expansive structure will showcase high ceilings with an oversized window to view the distillery (similar to view of the winery in The Crush House). A craft cocktail lounge and posh cigar lounge will be featured inside the venue which will overlook the park trails and creek bed. Public and private tours of the distillery will be offered, as well as tasting experiences. The craft distillery will be built adjacent to the south vineyard (in front of the new hotel) and will offer a welcome center for guests.

“We are proud to be one of the first wineries in Ohio to break into the craft distillery market,” said Scott Swaldo, Owner and General Manager of GV Destinations. “There are very few distilleries in Ohio. This provides a great opportunity to expand the demographic into the millennial market and broaden our appeal to consumers seeking a unique experience.”

In anticipation of offering craft cocktails, Gervasi has added a full bar inside The Bistro (the original restaurant to the property which opened in 2010). In The Bistro, an extensive cocktail menu features local craft cocktails among other top shelf spirits to “jump start the experience”. The cocktails are playfully designed and named to fit a “gangster” theme, which is in reference to a shoot-out that took place on the property in 1922.

“Our offering of spirits is still under development, and will certainly evolve. We anticipate beginning with wine barrel-aged Bourbon, Whiskey, Vodka, Gina and select Liqueurs and Brandy, “said Swaldo.

Gervasi Vineyard and the City of Canton are excited to share the development of the two new additions to the estate. “It was important to collaborate with the City of Canton with this project,” said Ted Swaldo. “Canton is home to our family and we are proud to build our family legacy here.”

Gervasi Vineyard is a prime example of how the City of Canton is supporting growth and development of tourism in our backyard. “Gervasi is a first-class destination for locals and tourists for our great city,” said Tom Bernabei, Mayor of Canton. “The current assets – The Bistro, The Crush House, the winery and The Villas – make me proud that Gervasi Vineyard calls Canton home. The addition of the hotel and distillery will be over the top.”

The boutique hotel and distillery are scheduled to be completed in late 2018 or early 2019, with an opening date to be announced.
